Chicken Marsala with Lemon Reduction

This classic western Sicilian dish is one of my favorites to share with family and friends. With a dash of lemon added to the Marsala base, this dinner is sure to please all.

Rich flavored recipe, filling for the whole family

Chicken Marsala - with hint of lemon reduction. This lovely dish is a variation of traditional Italian scaloppina dishes. The Italian dish dates back to the 19th century, when it most likely originated with English families who lived in western Sicily, where Marsala wine is produced.

Ingredients:

>2-3 chicken breasts

>1 teaspoon each of salt and pepper

>2 teaspoons of ginger

>salted butter (1/4 cup)

>1/2 teaspoon of basil

>2 teaspoons of olive oil

>1 teaspoon of minced garlic

>1 container of mushrooms

>1 box of chicken broth (approximately 3-4 cups used)

>1/3 cup of dry Marsala

>1 squeezed lemon (1/4-1/2 cup)

>1 box of gluten free pasta (Or pasta of choice)


General directions:


1) Preheat the pan and add olive oil, once slightly steaming add chicken

2) Season chicken with ground ginger, basil, and salt and pepper on both sides evenly. Cook until brown on both sides, approximately 3 minutes. Do not cook the chicken all the way through. Take the chicken out of the pan to the side and cover with foil.

3) Add minced garlic to the pan until lightly brown. (approximately 2 minutes)

4) Add butter and then add mushrooms to cook, brown both sides (add salt and pepper as it cooks. (Approximately 4 minutes), Once cooked, place to the side to prep for sauce.

5) Add 1/3 cup of the marsala sauce until simmering. Add freshly squeezed lemon (approximately 1/4 -1/2 cup (you can omit the lemon, if you don't like this flavor).

6) Slowly add in chicken broth until boiling, mix with a whisk. Boil for about 2-3 minutes.

7) Add the chicken and mushrooms back into the pan. Add a lid to the top to steam thoroughly through. Approximately 6-10 minutes.

7B) Boil water in a separate pan with a dash of salt for pasta prep. Follow box directions to boil then add pasta (approximately 7-8 minutes) I enjoy and recommend a red lentil gluten free pasta.

8) Once the chicken is cooked, add the Chicken Marsala with mushrooms on top of fresh pasta. Sprinkle a small amount of basil/ Parmesan cheese for décor and #voila #chickenmarsala is ready to enjoy!
