Piccata meaning is how chicken is prepared. In this recipe, the meat is simply coated in egg base and layered with a gluten free bread crumb. Perfect for any dinner occasion to impress your guests, and very flavorful.
As you might of picked up from reading my other recipes, I LOVE to cook with lemon. There are many health benefits to using lemon in your every day diet, because it has high amounts of vitamin C, soluble fiber, and plant compounds that contribute to reducing heart disease, anemia, kidney stones, and digestive issues. So take a breath and smile as you add a little more lemon to your water.
What I think you will enjoy most about this dish is that the sauce compliments the crispy chicken, because the lemon has a bold citrus flavor that blends well with the salty capers. This light, crispy dish will make you want to come back for seconds!

Citrus lemon flavor with a hint of dry wine to balance out the salty caper taste
Ingredients:
For chicken:
>4 boneless, skinless chicken breasts
>1 dash of ground ginger
>3/4 cup of gluten free, seasoned bread crumbs
>3 egg whites (utilize a 1/2 of a yolk if desired)
>1/4 teaspoons of kosher salt
>1/4 teaspoon of ground black pepper
>Olive oil spray to coat chicken (and bottom of metal pan)
For sauce:
>1 lemon for sauce
>1 tablespoon of capers
>3/4 cup of chicken broth
>1/4 cup of dry white wine (I used a Riesling)
>1 tablespoon of butter (I like to use #kerrygoldbutter)
>Fresh ground, cracked pepper
>Trickle Freshly ground Parmesan on top (as desired)
Garnish:
>1/2 lemon sliced for serving
>Chopped Fresh Parsley leaves
General directions:
1) For this recipe, I used an air fryer, and set it to 370 degrees. Or you can Preheat oven to 375 degrees.
2) In a medium mixing bowl, add gluten free bread crumbs, ginger, salt, pepper. Set to the side. On the side, cut any unwanted fat from the chicken breasts.
3) In a separate bowl crack three egg whites, and 1/2 yolk as desired and whisk together.
4) Dip the chicken into the egg whites and then into the bread crumb mixture. Gently press into the chicken and then spray olive oil lightly on both sides. Repeat steps for all chicken breasts.
5) Spray olive oil onto the metal base of the air fryer or a baking sheet to coat the bottom. Place the chicken in the air fryer for 7 minutes total, flipping halfway through, until cooked thoroughly and crispy.
For oven directions, cook for 15 minutes total, and flip halfway through.
6) While the chicken is cooking, you will want to take a medium skillet and start to melt the butter in the pan. Add capers to slowly start to soften. I squeezed a full lemon into a bowl and then add to skillet, with chicken broth and wine. Allow to boil, and simmer, approximately 3-4 minutes. Set to the side.
7) Remove chicken from air fryer or oven, and coat with sauce. Garnish with freshly chopped parsley and serve with lemon slices #chickenpiccata is ready to serve #Voila Enjoy this delicious, lemony dish. Brought to you by #cookingwkara
