Easy Three Step Chicken Tacos

Inspiring sauce by IL Mongetto Pepito found at Eataly

 

Who wants to cook an elaborate meal when all you want to do is relax on your sofa after a long day at work? Taco Tuesdays are always a welcoming and easy/spicy dish required after a tiresome start to the week.

And luckily for you, this meal allows you to follow a quick three step prep process and get you back to your relaxing oasis. Plus it only takes 15-16 minutes to cook.


A little history, When I was exploring #Eataly in Boston one day, I came across this medium hot condiment called, #MongettoPepito, which turned out to be the base of this dish. This sauce base provides a perfect spicy-savory combination due to its ingredients including hot peppers, olive oil, and garlic base. Produced/and imported from the region of Piedmont, which is located in the northwest region of Italy. Piedmont is surrounded by Liguira to the south, Lombardy and Emila-Romagna regions to the east and Aosta Valley north west- and boarders a portion of Switzerland and France to the west. Clearly with so many regions within close proximity of Piedmont, this provides a variety of inspiration for unique/flavorful base creations.

A spicy base, and flavorful taste- that is SO easy to make

Main Ingredients:

>2-3 chicken breasts, cut and diced into small pieces

>2 tablespoons of Il Mongetto Pepito (medium-hot condiment).

(You can substitute with a similar products like: Trader joes- Traditional Tunisian Harissa Hot Chili pepper paste with Herbs & Spices)

>3 teaspoons of olive oil (drizzled on top)

>1/2 of a onion, diced

>Season with Salt and Pepper on top

>(Optional if you like spice) 1-2 teaspoons of paprika


Topping Ingredients (Suggestions):

>Drizzle Cholula sauce (for extra hot spice- *Fan Favorite of mine)

>Add guacamole

>Add sour cream

>Add Shredded cheddar cheese

>Add Spinach or Shredded Roman Lettuce

>1/2 teaspoon of chives to top


General directions:

1) Preheat oven to 350 degrees. Cut and dice chicken, onions and add to a Mixing bowl. Stir ingredients with Il Mongetto Pepito (or similar sauce). Coat a baking pan with olive oil on the bottom of the pan and add the ingredients to the pan. Add salt, pepper, paprika, and olive oil.


2) Next place in the oven for 8 minutes and then flip chicken/onions over. Continue to cook for another 8 minutes (16-18 minutes total or until cooked through)


3) Plate Chicken Tacos in desired soft shells (I like to use Spinach/Wheat/ or Flour base) and serve with your favorite toppings!
