We will be making Strawberry Smash Drink and Cauliflower Tacos!


Ingredients and Pre-Prep Suggestions are below:
INGREDIENTS Strawberry Smash Drink
1-2 sprigs of fresh basil
1/4 cup (or quantity of 2-3 chopped) fresh strawberries with powder sugar (see drink prep below)
Muddler or you can use a spoon (we will be mashing the berries in a shaker with basil)
2 ounces of vodka (or 1.5 jigger shot)
1 ounce of lemon juice (I'll probably squeeze 1 lemon )
3-4 ice cubes
3-4 ounces of soda water
In a cocktail shaker press basil and strawberries together with muddler to release basil flavor. Fill the shaker with ice. Measure vodka and lemon juice. Cap and shake, shake shake. Last pour in a glass and top off with soda water. Garnish as you wish with extra basil and a strawberry.
Roasted Beer and Lime Cauliflower Tacos
1 cauliflower head
3/4 cup of beer
3-4 cups of chicken OR vegetable broth
1/2 of fresh squeezed lime juice
2 teaspoons of soy sauce (or can use tamari)
OPTIONAL (spicy add) 2 teaspoon of chipotle hot sauce or any hot sauce brand (I will use *cholua because that's what is in my fridge)
3-4 cloves of garlic
Seasoning for cauliflower after boiling/straining
1-1/2 teaspoon of chili powder or Trader Joe’s Chili-Lime Seasoning
1 teaspoon of paprika
1/4 teaspoon of garlic powder
Pinch of salt
Dash of ground pepper
1/2 yellow onion chopped
1 teaspoon of olive oil
Grab favorite soft shell or corn tortillas for food
Topping recommendations (optional)
1 avocado or guacamole for adding to tacos after prep
Your favorite Salsa
Shredded cheese or lettuce
Quick Lime and Cilantro Lime Slaw (see below if you want to add to your cauliflower tacos)
Quick lime and cilantro slaw
Buy pre-cut Coleslaw Kit (can find at Trader Joe's or any super market) which will save you some time on chopping more veggies.
2 tablespoon of lime juice
2 tablespoons of rice vinegar
1 teaspoon of olive oil
Dash of salt
1/3 cup of chopped cilantro
PRE-PREP BEFORE CLASS
Drink Prep
A few hours prior to class, cut up strawberries into small pieces and add a little powder sugar (1/4 cup or less on top) in a shaker.)
Taco Prep
Preheat oven to 400 degrees
We will be simmering the sauce/ garlic and using a medium pan/lid to boil on the stove top (cauliflower to be added after)
1 strainer needed
1 mixing bowl to add dressing/ spices for the cauliflower
1 non-stick rimmed baking sheet (foil or non stick mat needed)
