Lazy Lady Eggplant with Homemade Sauce

While its now fall, it time to get a lovely homemade sauce together and keep it simple for dinner time. This Italian dish is packed full of fresh ingredients and very flavorful and light. The key is to pan fry the garlic, tomatoes, and herbs before letting the sauce simmer. Similar with the eggplant, I tend to pan fry it to make the eggplant a bit softer/ crispy before adding it to the oven.

This lovely meal is great to toss on top of veggie pasta from #traderjoes. What makes this dish simple and fairly quick to make is the limited ingredients you need to pull it all together. Fresh, delicious and honestly good food=good mood

 
 
 
 


Lovely Lazy Ladies Eggplant

Lazy Ladies Eggplant

Ingredients:

>1 carton of Roma tomatoes

>6-7 garlic cloves

>8-10 leaves of fresh oregano

>1-2 tablespoons of garlic olive oil from #saratogaoliveoil

>1-2 cup of water

>1 teaspoon of Gluten Free Flour

>dash of salt and pepper

>1 teaspoon of ground garlic

>1 tablespoon of chopped basil

>1 teaspoon of ground ginger

>2 teaspoons of tomato paste

>1 eggplant sliced in circular form, 1/4 inch or less

>1/4 cup of shredded mozzarella

>3 tablespoons of parmesan

>1/4 cup of gluten free Italian bread crumbs



General directions:

1) Preheat oven to 400 degrees. Chop garlic, tomatoes and herbs.

2) In a medium deep-non stick pan, add olive oil, garlic into the pan until garlic is lightly browned. Next add the tomatoes, herbs salt and pepper. Cook for about 15 minutes on medium-high heat.

3) Next, add a cup of water, gluten free flour, chopped basil, salt and pepper and ground garlic and garlic powder. Simmer for 15-20 minutes on low to medium temperature stirring often. Cover with a lid and add up to 1 more after a few minutes of cooking.

4) Then add 2 teaspoons of tomato paste. Continue to boil for 30-40 minutes, stirring periodically.

5) While the sauce is cooking, slice up eggplant into circular cuts 1/4 inch thickness or less. In a separate pan, add a dash of olive oil and brown eggplant on both sides for approximately 2-3 minutes.

6) Once the eggplant is lightly browned, in a baking dish, coat the bottom of the pan with olive oil and place the eggplant on the bottom.

7) When the sauce is done, drizzle majority of the sauce on top of the eggplant into the baking pan. Then add bread crumbs, shredded mozzarella and ground parmesan. Add a dash of fresh sage for garnish. Place in the oven at 400 degrees for 10-15 minutes.

8) Take out of the oven and then set aside to cool. Serve this lovely ladies eggplant on top of your favorite pasta #voila #cookingwkara
