Entering in another year of resolutions, hopes, dreams, aspirations, all that jazz. What I find to be most inspirational is a lot of the people I'm surrounded by never cease to amaze me as they continue to follow through with many of their goals and dreams.
One close friend of mine I would like to dedicate this recipe to is my friend Rach. Day to day, she continues her fitness journey, helping others while still working full time. It takes a lot of ambition and dedication to accomplish this all in one day.
Let me tell you a little about this spontaneous gal- shes always doing headstands, crazy back bends aka 'wheel', barre moves and yoga day & night. <I'm just not sure how to keep up, that's all I'm saying :) > But her enthusiasm and motivation have proven to help inspire many people. I always look forward to reading up on her life quotes such as this one:

There is no doubt in my mind that you may be a little happier after you try these protein bites. We all need a little pick me up after working out, or maybe feeling a bit run down, so why not try these perfect sized bites, and revive that energy again? RachPRIME Protein Bites (Non-bake Recipe)
Opt 1: *(Rach's favorite) Ingredients:
>2 cups of Rolled Oats
>2 teaspoons of cinnamon
>1/2 cup of vanilla Whey Protein
>1 teaspoon of Chia Seeds
>3 teaspoons of honey
>2 teaspoons of vanilla extract
>1 cup of smooth sunflower seed butter
>5 teaspoons of coconut unsweetened milk- during mixing process, see directions below. (you can also use any other liquid such as water, almond milk, ect.)
>1/4 cup of chocolate chips (or you can substitute for other nuts, flax seed, ect.)
>2 teaspoons more of liquid to add after mixed to thicken as needed
Opt 2: *(Kara's favorite) Ingredients:
>2 cups of Rolled Oats
>2 teaspoons of cinnamon
>1/2 cup of chocolate Whey Protein, (I like to use #arbonne protein)
>1 teaspoon of Chia Seeds
>3 teaspoons of honey
>2 teaspoons of vanilla extract
>3/4 cup of peanut butter
>5 teaspoons of coconut unsweetened milk- during mixing process, see directions below. (you can also use any other liquid such as water, almond milk, ect.)
>1/2 cup of chocolate chips (or you can substitute for other nuts, flax seed, ect.)
>2 teaspoons more of liquid to add after mixed to thicken as needed
General directions:
1) Mix the Oats, cinnamon, and Whey Protein in a #kitchenaid mixer (or you can mix by hand). Add Chia Seeds. Mix at 2-3 speed for 2 minutes
2) Add in honey, vanilla extract and your choice of peanut butter or sunflower seed butter. (I made two different batches). Mix until it starts to ball up slightly.
3) Slowly, start to add liquid, I used coconut milk (but you can use any liquid), one teaspoon at a time and pause in between adding to the mixture until you put 5 teaspoons in. The mix should start to become a little more balled up. Add chocolate chips (or nut substitutes).
4) Next, you will want to take the bowl off the mixer and start to pat together ball shape forms, place them on a flat sheet or plate. If the mixture starts to crumble a little more than normal, add about 2-3 teaspoons of water and mix. Continue to make balls until the remaining mixture is gone.
5) Place the rolled bites into the refrigerator in an air tight container for up to 30 minutes before serving. Its highly recommended to keep these bites in the refrigerator until you are ready to eat and enjoy them #Voila rachPRIMEprotein bites are ready to be served. Brought to you by #cookingwkara
