Roasted Eggplant Dip

Eggplant dip is an easy healthy dip for any party occasion. Not to mention the nice flavorful kick it provides.


 

Some fun facts about eggplant is one serving equals about 5% of a person's daily fiber, copper, magnesium, B-6, and thiamine. In addition, the fiber, potassium, vitamin B-6, vitamin C and antioxidants in eggplants all support heart health. So you shouldn't feel too guilty indulging

Ingredients:

>1 unpeeled eggplant

> 2 red bell peppers (seeds removed)

>1 red onion

>2 cloves of garlic, minced

>3 tablespoons of olive oil

>1-1/2 teaspoon of salt

>1 teaspoon of ground black pepper

>1 teaspoon of tomato paste


General directions:


1) Peel the red onion, and garlic and dice

2) Remove seeds from red pepper and dice into small pieces

3) Chop ends of eggplant, and toss. Dice remaining eggplant into small chuncks

4) Add Ingredients into bowl and toss with olive oil, salt and pepper

5) Use baking sheet and evenly spread out vegetables on tray

6) Heat Veggies at 400 degrees for 45 mins

7) Once cooked till slightly charred, add to a food processor and add tomato paste

8) Blend thoroughly and enjoy with crackers/ bread or on veggies. This dip is also a nice compliment for a pasta or rice topper.
