Salmon Bites

I am always trying to make salmon taste a bit better by enhancing or adding a bit of a spicy kick to various recipes. As noted on some of my previous posts, salmon has a lot of positive health benefits including omega-3 fatty acids, high B vitamins, good source of potassium and may help reduce heart disease. So why not try and incorporate it more in your diet?

I do have to admit these bites, have a bit of starch added to them, but how can you resist an even balance of good to bad? What makes these bites so tasty, is the spice from some of the sauces and the crunch from the batter. The lemon juice acidity helps with mellowing out the spice, creating a lovely equilibrium. These appetizers are a great crowd pleasing snack for party guests or even to throw on top of a salad. Choose your own adventure!


*Pairs nicely with a dry white wine, like chardonnay (mineral base flavor is best) or try with a Sapporo or Tsingtao beer.

Salmon Bites- crispy-crunchy appetizer, spicy kick of flavor all in one little bite

General Wet and Spice Ingredients:

>2 Salmon fillets (boneless/ remove skin) or you can used canned wild salmon drained

>3 tablespoons of mayonnaise

>1 garlic clove minced

>1/4 teaspoon of cayenne pepper

>Season with Sea Salt and pepper

>1/4 teaspoon of black sesame seeds

>1/4 teaspoon of Red Chili Pepper flakes

>2 teaspoons of sesame oil

>2-3 teaspoons of Sriracha chili Sauce

>3 tablespoons of Water

>1-2 tablespoons of Extra Virgin Olive oil

>2 teaspoons of lemon juice

Separate Bowls for:

>1/2 cup of Gluten Free Flour (or substitute for almond flour)

>2-3 Egg Whites

Dry Ingredients for batter:

>1/4 cup of gluten free bread crumbs

>1 cup of Crisp Rice cereal

>1/2 cup of Tempura Batter Mix

>1 teaspoon of Baking powder


Garnish with:

>2-4 Lemon Slices


General directions:

1) Preheat air fryer to 350 degrees. (Or you can pan try on a hot skillet for 3-4 minutes with olive oil. If going this route, wait till Salmon bites are mixed together).

2) In a medium mixing bowl, cut up salmon fillet into small bites (you can also pop in the blender with a little water if you prefer to mince it smaller). Remove all skin. Add to the mixing bowl.

3) Mince Garlic fine and add to bowl. Add spices listed "wet and spice" (noted above) in one mixing bowl with the salmon and mix around thoroughly. Place in the refrigerator for 10-15 minutes.

4) Next add flour to one bowl. Add Egg whites to a separate bowl and whisk together.

5) Mix Dry ingredients together in a third bowl.

6) Take the Salmon mixture out of the refrigerator and make into 1 inch diameter balls.

7) Dip the bowl into the egg whites, and then into the flour, and last into the dry ingredient batter.

8) Spray olive oil in the bottom of air fryer. Bake on 350 for 12 minutes, flip halfway through.

(*Or if you are pan-frying, pre-heat pan with extra virgin olive oil or avocado oil and heat for 3-4 minutes. Add bites in the pan and sear on both sides, approximately 8-9 minutes total and flip halfway on both sides.)

9) Place on a serving dish, drizzle fresh lemon juice on top of the Salmon bites.

(*Another alternate option to lemon, is you can drizzle a chipotle aioli sauce on top)
