Lemon Basil-Pesto, full of flavor
Ingredients:
>1 tablespoon of salted butter
>1 clove of minced garlic
>1 bag of frozen #traderjoescauliflowergnocchi
>1/8 teaspoon of ground pepper
>2 tablespoons of water
>1 tablespoon of vegan-kale-cashew & basil pesto
>1 lemon squeezed (Juice is used for the sauce)
Garnish with:
>1 teaspoon of fresh or dried basil
>Sprinkle Parmesan on top
>1/2 lemon slice
General directions:
1) Preheat pan on medium heat and add a tablespoon of salted butter.
2) Add minced garlic to the pan until soft and lightly browned.
3) Add frozen Cauliflower Gnocchi to the pan and water into the pan. Cover with a lid for 3-4 minutes. Add in the pesto and simmer.
4) Add lemon juice into the pan and then add shrimp, heat on high for 2 minutes until boiling. Turn down the heat to a low temperature and let it simmer, approximately 3 minutes.
