Stuffed Boursin Mushrooms and Prosciutto & Muddled Cucumber Mint Vodka

Boursin and Prosciutto Stuffed Mushrooms

Ingredients:

> 24 white mushrooms

>2 tablespoons of olive oil

>1/4 teaspoon of salt

>1/8 teaspoon of pepper

> 1 package of #Boursin Garlic and Fine Herbs Cheese

>1 ounce #boarshead Prosciutto sliced chopped thin

>2 teaspoons of minced fresh chives


General directions:

1) Preheat oven to 450 degrees. Wash and remove mushroom stems from the top and pat dry. Mix the mushrooms with olive oil, salt, pepper, and lay down on foil wrapped baking sheet

2) Bake mushrooms for 25 minutes until they shrink

3) Remove mushrooms and let them cool

4) Flip over so the top portion can be filled with bousin

5) Add Boursin scope in each one and top with Prosciutto and chives

6) When ready to serve, add to oven at 450 degrees and cook for 10-12 minutes

7) Add a sprinkle of parmesan cheese for décor and #voila #stuffed mushrooms are ready to serve!



Muddled Cucumber Lemonade Vodka Cocktail

Pre-prep directions for homemade lemonade (OR substitute for store bought lemonade). Prep ‘homemade lemonade’ one day before cocktail prep. If you wish to make homemade lemonade here's how!

Homemade Lemonade Ingredients:

>1/2 cup honey

>1 cup of lemon juice (approximately =5-6 lemons freshly squeezed)

>6 cups of cold water

Directions: in a small pot boil one cup of water and add honey, stir until honey is fully dissolved. Set to the side and cool for 10 mins, then add squeezed lemon and juice and remaining water. Stir thorough. (option to add fresh lemon slices or hints of mint. Place mixture in the fridge for the cocktail the next day).


Cocktail Ingredients:

>1 cucumber (1/2 cup roughly chopped)

>1/4 cup of fresh mint leaves

>4 oz of vodka (any brand) / (or alternate option to use cucumber vodka)

>2 cups of lemonade (store bought or homemade option)

>Dash of sugar

>Ice (5-6 cubes)

A muddler is helpful tool for this drink or use a spoon to mash.


General directions:

1) Prep homemade lemonade as noted above

2) Chop 1/2 of a cucumber into small pieces and place in mixer cup.

3) Chop 1/4 cup of mint and place in a mixer.

4) Take the muddler and mash cucumber mint, and add a dash of sugar and small amount of vodka, continue to mask until muddled.

5) Add 2 shots of vodka (any brand but I enjoy Ketel one: Botanical Cucumber Mint )

6) Add 1/2 cup of lemonade and ice and shake

7) Add to your favorite stem wear and #voila #stuffed mushrooms are ready to serve!
