'Tis the Holiday season, to indulge and be Jolly. One of my favorite sugar cookie recipes my mom always would bake up was given to her by one of her cute customers. When my mom was the head manager at one of a local Boston grocery store, she would always ask the older Italian women some of their special recipes, and this was one of them that our family loves! Throughout the years, I always enjoyed how light and buttery these delicious treats were. Perfect to cuddle up to by the fire, this holiday treat is worth every bite. Sugar Cookies
Ingredients:
>1-1/2 cups of powdered sugar
>1 cup of butter, softened
>1 egg
>1 teaspoon of vanilla
>(optional) 1/2 teaspoon of almond extract
>2-1/2 cups of flour (if using gluten free flour, use xanthan- gum and use one teaspoon per cup of flour)
>1 teaspoon of baking soda
>1 teaspoon cream of tartar
General directions:
1) Mix powdered sugar, vanilla, (optional almond extract), egg and butter thoroughly. I like to use my kitchenaid to speed up the process!
2) In a separate mixing bowl add powdered sugar, baking soda, cream of tartar an sift. Next we will slowly add this into the other bowl with the eggs/vanilla, ect.
3) Slowly add 1-2 cups of the powder sugar mixture into your kitchenaid bowl. I tend to shut off the mixer as I add in a cup so the powder sugar doesn't get out of the bowl. Continue to mix on medium speed until fully mixed.
4) Once fully mixed, take the dough out and wrap in 2 balls in plastic wrap tightly. Place in the fridge for 2 hours.
5) Preheat oven to 370 degrees.
6) Next, take the dough out of the refrigerator. You will need some additional powder sugar to place on a flat, clean surface for rolling the dough out. You will want to sprinkle some powdered sugar on your surface so the dough does not stick to the bottom. Once you start to flatten out the dough on a surface, use a roller to roll out the dough evenly to about a 1/4" to 1/2" thickness. Use your favorite cookie cuter's to make shapes! OR alternately, you can just roll the dough into balls to create round cookies instead of shapes!
7) Next place the cookies on a silicone baking mat which will be on a baking sheet. This helps reduce the cookies from sticking! If you don't have one, you can spray a tiny amount of olive oil on the bottom of the pan.
8) Let the cookies bake for about 7-8 minutes. You want the edges of the cookies to be a very light brown before taking them out of the oven. Once out of the oven let the cookies cool on the baking sheet for 5-6 minutes before transferring them to a wire rack to cool down!
